The Callebaut 811 recipe is the leading choice for an all-round chocolate for use in confectionery; like caramels, chocolate clusters, chocolate spreads, cream and butter filling, ganache and truffles, as well as in patisseries and desserts; for use in bavarois, custards, ganaches, glazes, mousses, fondant and sponges. This 811 recipe is made from Callebaut signature Wieze blend. This will work in a range of applications ranging from confectionery to biscuits, drinks and sauces.
