Tips for Perfectly Level Cakes

This common baking dilemma happens because the outside of the cake heats up faster than the inside, which is more insulated. As a result, the middle has extra time to rise while the edges firm up too quickly. Fortunately, there are several ways to prevent this and achieve a beautifully even bake.

1. Use a Cake Wrap

Cake wraps, also known as baking strips, are a simple yet effective tool to promote an even bake. These strips are soaked in water and wrapped around the cake tin before baking. The moisture helps regulate the heat distribution, preventing the edges from overbaking while the centre catches up. You can purchase reusable cake wraps or make your own using damp kitchen towels wrapped in foil.

2. Try a Cake Nail

A cake nail, commonly used in decorating, can also help with even baking. Placing a metal flower nail upside down in the centre of the cake tin helps conduct heat more evenly throughout the batter. This simple trick allows the middle of the cake to bake at a similar rate to the edges, reducing doming and uneven cooking.

3. Lower the Oven Temperature and Bake for Longer

Baking at a lower temperature for a longer period helps control how quickly the cake bakes. A high oven temperature can cause the edges to set too fast, leaving the centre to rise excessively. Try reducing your oven temperature by 10-20°C and increasing the baking time slightly to allow for a gentler, more even bake.

4. Check Your Oven Temperature

Oven thermostats aren’t always accurate, and what your oven claims is 180°C might actually be much hotter or cooler. Using an oven thermometer ensures that your temperature settings are precise, preventing unintended hot spots or uneven baking.

5. Bake Your Cake in a Water Bath

A water bath, commonly used for cheesecakes, can also help cakes bake evenly. Place your cake tin inside a larger roasting pan filled with hot water before putting it in the oven. The water regulates the temperature around the cake, ensuring a gentle and even bake. This method is especially useful for delicate cakes that require moisture, such as sponges and chiffon cakes.

By following these tips, you can achieve a perfectly level cake with soft, even edges every time. Whether you're baking for a special occasion or just perfecting your technique, small adjustments like these can make all the difference in your final bake!
