The Callebaut 70-30-38 callet recipe is a dark chocolate with a taste profile of intense roasted cocoa, powerful bitter notes with fresh fruity hints. Handy 400g bag for smaller projects. This recipe has a lower fluidity, for which flavouring cremeux and dessert sauces it will be suitable for. It has a minimum of 70.5% cocoa solids and 38.9 cocoa butter. The cocoa bean origins are the Ivory Coast, Ghana and Ecuador which when blended achieve a perfectly balanced and round taste. These callets are suitable for applications such as patisserie, dessert, ice cream and sortbet flavouring including bavarois, cremes, custards, mousse, and more.
