The longer blade length makes it easier to level icing evenly in fewer passes, helping reduce drag marks, ridges and uneven texture during the smoothing process.

Particularly useful for royal icing work, the straight edge design helps achieve sharper sides and cleaner lines while offering decorators greater control when working across wider cake surfaces. It can also be used during buttercream preparation, chocolate work or ganache finishing where a flatter, more polished appearance is needed before decorating further.

Useful Tips:

For smoother results, hold the blade at a slight angle while rotating the cake turntable slowly and evenly. Using longer, lighter movements rather than short scraping motions can help minimise lines and overworked icing, particularly when smoothing royal icing or softer buttercream finishes.

Chilling buttercream or ganache slightly before using the straight edge can also help create cleaner sides and sharper edges during the final stages of decorating. Wiping the blade clean between passes helps maintain a smoother finish across the cake surface.
